G\u00fclla\u00e7, ni\u015fasta, g\u00fcl suyu ve s\u00fct\u00fcn birle\u015fiminden olu\u015fan, sindirimi kolay, transparan yapraklar h\u00e2linde haz\u0131rlanan bir tatl\u0131. B\u00fct\u00fcn g\u00fcn a\u00e7 kalan ve k\u00fc\u00e7\u00fclen midenin a\u011f\u0131r \u015ferbetli tatl\u0131larla yorulmamas\u0131 amac\u0131yla Osmanl\u0131 d\u00f6neminde geli\u015ftirilmi\u015f fonksiyonel bir yiyecek. Ancak Ramazan&#8217;\u0131n gastronomik zenginli\u011fi bu iki sembol\u00fcn \u00e7ok \u00f6tesine ge\u00e7iyor.<\/p>\n\n\n\n<p>Yerel \u00f6l\u00e7ekte Ramazan rit\u00fcelleri \u00e7ok daha spesifik ve ni\u015f \u00fcr\u00fcnler bar\u0131nd\u0131r\u0131yor. \u0130zmir&#8217;in Bergama il\u00e7esinde yaln\u0131zca Ramazan ay\u0131nda \u00fcretilen Z\u00fclbiye tatl\u0131s\u0131, yerel aidiyetin ve tarihsel aktar\u0131m\u0131n kusursuz bir \u00f6rne\u011fi. G\u00fcn\u00fcm\u00fczde kerebi\u00e7 d\u00fckk\u00e2nlarda y\u0131l boyu bulunabilse de, halk\u0131n haf\u0131zas\u0131nda h\u00e2l\u00e2 bir Ramazan tatl\u0131s\u0131.<\/p>\n\n\n\n<p>Marmara b\u00f6lgesinde, \u00f6zellikle \u0130stanbul ve bir\u00e7ok \u015fehirde y\u0131l boyu f\u0131r\u0131nlarda veya yufkac\u0131larda &#8220;yass\u0131 kaday\u0131f&#8221; veya &#8220;ta\u015f kaday\u0131f&#8221; olarak bilinen mayal\u0131, yass\u0131 hamur tatl\u0131s\u0131, \u0130zmit y\u00f6resindeki yufkac\u0131larda sadece Ramazan ay\u0131nda \u00fcretilerek \u00f6zel olarak &#8220;\u015eaklak&#8221; ismiyle piyasaya s\u00fcr\u00fcl\u00fcyor. Kurban Bayram\u0131&#8217;n\u0131n ilk g\u00fcn\u00fcnde sabah namaz\u0131n\u0131n hemen ard\u0131ndan kesilen kurban etinden an\u0131nda yap\u0131lan kavurma, belirli bir rit\u00fcele ba\u011fl\u0131 bir bayram kahvalt\u0131s\u0131. Etin dinlendirilmesi kural\u0131na tamamen ters d\u00fc\u015fmesine ra\u011fmen bu gelene\u011fin sosyolojik amac\u0131 \u00e7ok daha derin: Kurban\u0131n bereketini aile \u00fcyeleriyle an\u0131nda payla\u015fmak ve Allah\u2019a sunulan ada\u011f\u0131n kabul\u00fcn\u00fc fiziksel bir doyumla an\u0131nda kutlamak.<\/p>\n\n\n\n<p>Ramazan Bayram\u0131&#8217;nda ise ev baklavas\u0131 genel bir ulusal standart iken, y\u00f6resel pratikler inan\u0131lmaz bir emek yo\u011funlu\u011funa i\u015faret ediyor. Gaziantep y\u00f6resinde bayram sabahlar\u0131 i\u00e7ilen Yuvalama, s\u0131radan bir \u00e7orba veya yemek de\u011fil, yaz\u0131l\u0131 olmayan bir gelenek. Bayramdan g\u00fcnler \u00f6nce kom\u015fular toplan\u0131r, pirin\u00e7 unu, ya\u011fs\u0131z k\u0131yma ve karabiberden olu\u015fan hamuru saatler s\u00fcren bir mesaiyle nohut b\u00fcy\u00fckl\u00fc\u011f\u00fcnde yuvarlar. Et, nohut ve s\u00fczme yo\u011furt ile pi\u015firilen yuvalama, bayram sabah\u0131 t\u00fcm aileye ikram edilerek bu kolektif eme\u011fi ta\u00e7land\u0131r\u0131yor.<\/p>\n\n\n\n<p>Hatay&#8217;da Ramazan Bayram\u0131&#8217;nda evlerde tepsilerce yap\u0131lan K\u00f6mbe, bayram misafirperverli\u011finin zirvesi. Mahlep, muskat, karanfil, tar\u00e7\u0131n, zencefil, yenibahar ve damla sak\u0131z\u0131ndan olu\u015fan \u00f6zel baharat kar\u0131\u015f\u0131m\u0131yla, yani k\u00f6mbe baharat\u0131yla tahta kal\u0131plarda \u015fekillendirilerek f\u0131r\u0131nlan\u0131yor. \u0130\u00e7erdi\u011fi yo\u011fun baharatlar ve nem oran\u0131n\u0131n d\u00fc\u015f\u00fckl\u00fc\u011f\u00fc sayesinde aylarca bayatlamadan cam kavanozlarda durabilme \u00f6zelli\u011fine sahip.
